Using a spatula or wooden spoon, thoroughly mix all the ingredients together. The result should be a sticky yet firm mixture; if it feels too dry, incorporate a tablespoon of water or additional nut butter until the desired texture is achieved.
If desired, gently fold in the chocolate chips or dried fruits to enhance the flavor and texture.
With clean hands, take small amounts of the mixture and roll them into bite-sized balls, approximately 1 inch in diameter. Ensure each ball is compact for the best results.
Arrange the rolled energy bites on a baking sheet lined with parchment paper to prevent sticking.
Once all the mixture has been shaped into bites, place the baking sheet in the refrigerator for at least 30 minutes. This chilling period will help the bites firm up and hold their shape.
After chilling, transfer the energy bites to an airtight container and store them in the refrigerator for up to a week. For longer storage, you can freeze them, extending their life for several months.
