Once the mixture is well combined, use your hands to form small balls, each about 1 inch in diameter. If you find the mixture sticking to your hands, lightly dampen them with water to make the rolling process easier.
Arrange the energy bites on a parchment-lined baking sheet. After all the mixture has been rolled into balls, place the sheet in the refrigerator and chill for at least 30 minutes. This will help the bites firm up for better texture.
