Begin by preheating your oven to 425°F (220°C). Prepare a baking sheet by lining it with parchment paper for easy cleanup and to prevent sticking.
In a small mixing bowl, combine the extra virgin olive oil, minced garlic, dried oregano, smoked paprika, salt, and black pepper. Whisk the mixture vigorously until all ingredients are well blended and fragrant.
Place the cauliflower steaks in a single layer on the prepared baking sheet. Use a brush or spoon to generously coat both sides of each steak with the garlic oil mixture, ensuring they are well covered for maximum flavor.
Roast the cauliflower steaks in the preheated oven for approximately 20 minutes. Be sure to flip them halfway through cooking to achieve a beautiful golden-brown color and tenderness.
Once flipped, evenly distribute the freshly grated Parmesan cheese atop each cauliflower steak. Return them to the oven and continue roasting for an additional 5 minutes, or until the cheese has melted and is delightfully bubbly.
After baking, carefully remove the cauliflower steaks from the oven and allow them to cool for a few minutes. To finish, garnish with a sprinkle of freshly chopped parsley, adding a pop of color and freshness before serving.
