Preheat your oven to 425°F (220°C) to ensure it's hot enough for that perfect crisp.
In a large mixing bowl, add the halved baby potatoes along with the olive oil, minced garlic, dried oregano, smoked paprika, salt, and black pepper. Use your hands or a spatula to toss the potatoes until they are thoroughly coated with the seasoning mixture.
Line a baking sheet with parchment paper to prevent sticking, then spread the seasoned potatoes in a single layer on the sheet. Make sure they have some space between them for even roasting.
Place the baking sheet in the preheated oven and roast for 25 minutes. After this time, carefully remove the sheet from the oven and sprinkle the grated Parmesan cheese evenly over the potatoes.
Return the baking sheet to the oven, and continue roasting for an additional 10-15 minutes, or until the potatoes turn a beautiful golden brown and develop a crispy texture.
Once roasted to perfection, remove the baking sheet from the oven and allow the potatoes to cool for a couple of minutes to enhance their crunchiness.
Just before serving, generously garnish the crispy potatoes with finely chopped fresh parsley for a pop of color and freshness.
