Instructions
Begin by preheating your oven to 375°F (190°C). Grease a 9x13 inch baking dish with cooking spray or butter to prevent sticking.
Carefully open the cans of cinnamon rolls. Each roll should be cut into quarters—this makes it easier to layer in the casserole. Distribute the quartered rolls evenly in your greased baking dish.
In a large mixing bowl, add the eggs and whisk them lightly. Next, pour in the milk, vanilla extract, ground cinnamon, grated nutmeg, and packed brown sugar. Whisk these ingredients together until everything is well blended and smooth.
Pour the egg mixture over the cinnamon roll pieces in the baking dish. Use a spatula or your hands to ensure that each piece becomes soaked with the delicious custard mixture.
If you like a nutty crunch, sprinkle the chopped pecans evenly over the top of the casserole.
Place the baking dish in the preheated oven and bake for 25 to 30 minutes. The casserole is done when the center feels set and the top is a beautiful golden brown color.
While the casserole bakes, take the icing that came with the cinnamon rolls and warm it in a small microwave-safe bowl for about 10 to 15 seconds. This will make it easier to drizzle over the finished dish.
Once the casserole is finished baking, carefully remove it from the oven and let it cool for about 5 minutes to firm up slightly.
Take the warmed icing and drizzle it generously over the top of the casserole for added sweetness.
Cut the casserole into square portions and serve warm. Top each serving with a dollop of whipped cream and a sprinkle of fresh berries for a delightful garnish.
