Instructions
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
Add the diced cold butter to the flour mixture. Use a pastry cutter or your fingertips to work it in until the mixture resembles coarse crumbs.
Stir in the chocolate chips until evenly distributed.
In a separate small bowl, whisk together the heavy cream, egg, and vanilla extract until smooth.
Pour the wet ingredients into the dry mixture and stir gently until just combined. Do not overmix; it's okay if the dough is a bit crumbly.
Turn the dough out onto a lightly floured surface and press it into a rectangle about 1 inch thick.
Cut the rectangle into small bite-sized squares or triangles (about 4 cm).
Place the scone bites onto the prepared baking sheet, leaving some space between each piece. If desired, sprinkle additional chocolate chips on top of each scone bite.
Bake the scone bites in the preheated oven for 15-18 minutes, or until the tops are lightly golden and a toothpick inserted in the center comes out clean.
Remove the baking sheet from the oven and let the scones cool slightly before transferring them to a wire rack to cool completely.
Notes
Serve the scone bites on a nice platter, garnished with fresh berries or mint leaves for a colorful contrast.
